It does not have to be complicated! Lunch does not have to take hours in the kitchen. In just a few minutes, you can prepare delicious and, above all, nutritious recipes. The Centro Colombiano de Nutrición Integral (Colombian Center for Integral Nutrition) website shares some quick options that are healthy as well.

 Hawaiian salad – Preparation time: 15 minutes

(4 servings)


2 Cans of tuna (recommendation: in water)

1 cup   Chopped pineapple

½ cup   Chopped red bell pepper

½ cup   Double cream cheese, in cubes

2 tbsp   BBQ Sauce (recommendation: low-sodium)

1 tbsp   Mustard

1 tsp   Oregano

2 tbsp   Vinegar

8 Leaves of green lettuce

Salt and pepper, to taste


Mix the mustard with the BBQ sauce, oregano, vinegar, salt, and pepper. Add the rest of the ingredients, and lastly add the tuna. Mix well and serve.

Italian chicken – Preparation time: 40 minutes

(4 servings)


600 g   Chicken thigh and breast (boneless, skinless)

100 g   Precooked broccoli

150 g   Ripe tomatoes, chopped

3 Cloves of garlic

150 g   Mushrooms

90 g     Red onion, julienne

80 g Black olives

40 ml   Olive oil

1 tbsp  Oregano

40 g     Parsley

Salt and pepper, to taste


Pre-heat the oven to 180° C. Put all ingredients on foil, coat them with olive oil and season with garlic, pepper, salt, and oregano. Cover with foil and bake for 25 minutes. Serve with pasta or bread. Garnish with parsley.

Summer salad – Preparation time: 20 minutes

(4 servings)


2 Cans of tuna

4 tbsp   Olive oil

2 Cloves of garlic, minced

1 Red onion, julienne

½ cup   Sweet corn

½ cup   Carrots, in batons

½ cup   Bell pepper, julienne

2 cups Richi potatoes (or criollas), cooked and chopped

2 tbsp   Mustard

Parsley, salt, and pepper, to taste


Sauté the garlic, onion, corn, carrots, and bell pepper. Add the potatoes and then remove from heat. Add the mustard, olive oil, salt, and pepper. Mix in the tuna, and sprinkle with parsley. It can be served cold or hot.
